Easy Cookie Dough Dip Recipe

I thought this was going to be weird. You know…there are some healthy recipes that seem like a good idea, but they really aren’t. My husband, Bret, is rarely impressed with those recipes but THIS is one that even he enjoyed. And, this easy cookie dough dip recipe is one that even I can follow.

Here’s what you do:

Get out your food processor.

Add 1 1/2 c of garbanzo beans/chickpeas

* I like easy recipes. I like simple…but canned garbanzo beans are NOT for me. They are slimy and weird. Maybe it doesn’t matter for this recipe, but if you can get the dried beans, soak them overnight and then simmer them for 45 minutes, that’s WAY better tasting and better for you #justsayin.

Add a pinch of salt and a pinch of baking soda. (1/8 tsp if you care about precision)

Add 2 tsp of pure vanilla

Add 1/4 c of peanut butter

* I used natural pb, and you can even make your own nut butters with the food processor. Do that first and you don’t even need to clean the food processor before making this Cookie Dough Dip.

Add 3 T of oats

Add 2 T of almond milk (more if it’s too dry)

Then turn that food processor on and let it go until it’s smooth! Mix in 1/4 c of chocolate chips and you’re set! Yummy!!
